Vanilla Coconut Protein Bread

This is the perfect bread to impress your friends at your next potluck brunch!

Ingredients

  • 1 cup gluten-free flour
  • 1 scoop of vanilla protein of Xpn Iso Xtrem
  • 3 tablespoons coconut flour
  • 1/3 cup of Erythritol
  • 1/4 cup gluten-free oats
  • 1/2 cup frozen coconut cube, if you don't have any, put 1/4 cup of coconut in it
  • 5ml of baking powder
  • 1 egg
  • 1/3 cup almond milk
  • 45ml of melted Coconut Oil
  • 5ml vanilla
  • 2 squares of 85% dark chocolate
  • 1 pinch of salt

STEPS 

  1. Preheat oven to 350°F. Butter a loaf pan with Pam
  2. In a bowl, combine the egg, almond milk, coconut oil and vanilla.
  3. Add the flour, protein powder, erythritol, oats, baking powder and cubes of coconut, then stir to make a paste.
  4. Stir the mixture into the pan. Add the dark chocolate and sprinkle with coconut.
  5. Bake in the oven for 20-25 minutes, then let stand before unmoulding and slicing.
