Vanilla Coconut Protein Bread
This is the perfect bread to impress your friends at your next potluck brunch!
Ingredients
- 1 cup gluten-free flour
- 1 scoop of vanilla protein of Xpn Iso Xtrem
- 3 tablespoons coconut flour
- 1/3 cup of Erythritol
- 1/4 cup gluten-free oats
- 1/2 cup frozen coconut cube, if you don't have any, put 1/4 cup of coconut in it
- 5ml of baking powder
- 1 egg
- 1/3 cup almond milk
- 45ml of melted Coconut Oil
- 5ml vanilla
- 2 squares of 85% dark chocolate
- 1 pinch of salt
STEPS
- Preheat oven to 350°F. Butter a loaf pan with Pam
- In a bowl, combine the egg, almond milk, coconut oil and vanilla.
- Add the flour, protein powder, erythritol, oats, baking powder and cubes of coconut, then stir to make a paste.
- Stir the mixture into the pan. Add the dark chocolate and sprinkle with coconut.
- Bake in the oven for 20-25 minutes, then let stand before unmoulding and slicing.
