Banana and Chocolate Mini muffins
These Muffins are super fluffy and easy to make.
Ingredients
- 3 ripe bananas
- 1 1/2 scoop of Believe Transparent Isolate unflavored Protein
- 1/3 cup of peanut butter
- 1/3 cup maple syrup
- 2 tablespoons Coconut flour
- 1/3 cup chocolate chips
- 1 tablespoon baking powder
Steps
- Preheat the oven to 320°F. Butter a mini-muffin pan with Pam or coconut oil.
- In a bowl, mix the protein powder, coconut flour and baking powder.
- In another bowl, mash the bananas into a purée and add the butter, peanut butter, maple syrup and chocolate chips. Add this mixture to the ingredients
dry and stir until a paste is formed. - Spoon batter into mini-muffin pans (up to 3/4 of the pan).
- Bake in the oven for 20-23 minutes. Makes 20-22 mini muffins
