Banana and Chocolate Mini muffins

These Muffins are super fluffy and easy to make.

Ingredients

  • 3 ripe bananas
  • 1 1/2 scoop of Believe Transparent Isolate unflavored Protein
  • 1/3 cup of peanut butter
  • 1/3 cup maple syrup
  • 2 tablespoons Coconut flour
  • 1/3 cup chocolate chips
  • 1 tablespoon baking powder

Steps

  1. Preheat the oven to 320°F. Butter a mini-muffin pan with Pam or coconut oil.
  2. In a bowl, mix the protein powder, coconut flour and baking powder.
  3.  In another bowl, mash the bananas into a purée and add the butter, peanut butter, maple syrup and chocolate chips. Add this mixture to the ingredients
    dry and stir until a paste is formed.
  4.  Spoon batter into mini-muffin pans (up to 3/4 of the pan).
  5.  Bake in the oven for 20-23 minutes. Makes 20-22 mini muffins
